Cheesecake for Breakfast?!

You read the title correct... I have discovered how you can eat your dessert in the morning and still know you are eating healthy!

Thanks to my roommate for picking up a new flavor of Chobani Yogurt - lemon I had an euphoric moment Saturday morning!  I was just waking up after a long day of flying home from Odessa and I was starving but I had no desire to cook.

I saw the yogurts and grabbed one from the fridge.  I knew I needed a bit more to satisfy my hunger so I reached for my Chia Seeds and Ancient Grains Granola for texture.

The last ingredient was actually added because honestly I was scared I wouldn't like the lemon on its own.  I added a spoonful of Smucker's Sugar Free Raspberry Jam.
I wasn't expecting much but after my first bite I was in love!  The tartness from the lemon yogurt reminded me of a New York Style Cheesecake, tangy and light.  The crunch from the Granola with a hint of sweetness was the perfect balance.  My last minute addition brought it over the top though, I didn't lose the cheesecake flavor but every few bites you would be hit with the burst of fruit from the jam.

I didn't grab a photo of this because lets be honest I was still very jet lagged and I inhaled it before I could even have the chance to snap a picture.

When breakfast came around, I knew as soon as I woke up what I would be having...  I stored the jam and granola in a mini-tupperaware jar (good portion control too!), grabbed my yogurt and some tea from Wegmans and headed off to work.
It was soo good!  My next attempt with this combo will be overnight oats w/ the yogurt, oatmeal and jam soaking overnight....
