Beef Stuffed Acorn Squash

It never fails, you sign up for your local CSA with plans of making amazing healthy dishes every night....

The reality is you pick up this GIANT bag of amazing food each week, only get through half of it and stand in your kitchen scratching your head trying to figure out what to do with the rest.

That exact scenario has been playing out daily in my apartment with the most GIANORMOUS Acorn Squash ever to enter my home!  It looked so beautiful but what are two busy ladies like us going to do with that thing????

As always I went to the web for inspiration.  I found many vegetarian options but had some ground beef in the apartment I wanted to use up. (Will totally be making the Moroccan Vegetarian option I found soon though!!!!) The winning recipe ended up being a mash of several recipes found on 

I admit I was bit nervous tackling this multi step (not one pot dinner) but the "waste not want not" girl in me took over!  Here is my photo montage of my creation!  I highly suggest you make this or some variation on it.  It was incredibly filling, fun to eat and generally very healthy! (ground beef is good in moderation right?)
